The week of Easter meal plan!

Cooking is such a wonderful hobby to have.  Making food at home saves us money and lets us eat healthy.  Last week we had some delicious food.  The Gluten Free Waffles with Blueberry Sauce were nice, although they would have been better with some fresh whipped cream.  The Quinoa Vegetable Soup had a very nice flavor and was so nice to have for lunch during the week.  I really enjoyed the Green Goddess Hummus Sandwich.  The hummus was great to use as a dip for fresh veggies.  My favorite meal of the week was certainly the birthday dinner Mahi Mahi with Lemon Caper Cream Sauce, Zucchini Gratin, Creamy Garlic Quinoa and Chocolate Cupcake.  The meal really did come together quite quickly and the flavors were so nice together.  I do think the Lemon Caper Cream Sauce will be a favorite, and I see tilapia with that sauce being on the menu soon.  I think the Zucchini would make a wonderful summer vegetable casserole with some fresh basil and a layer of summer tomatoes just below the zucchini.  
This week I am cooking out of some of my favorite cookbooks.  I have listed the book and the page number of the recipe.  In case you don’t have these books and want to cook along, I found some similar recipes online for you.
