I make this weekly

For the past few months I have made granola weekly.  It is such a wonderful thing to do.  The house smells wonderful as it bakes and then you have a wonderful treat for the week.  It is a great way to start the day. Eat it plain or with some yogurt (Greek or Noosa yogurt for me).
I have played around with a few recipes and finally have a recipe of my own.  It is based on Alton Brown's granola recipe.



My favorite Granola

3 cups rolled oats
1 cup cashews
1 cup walnuts
3/4 cup shredded coconut
1/2 cup sunflower seeds
6 tablespoons dark brown sugar
6 tablespoons maple syrup or honey
1/4 cup vegetable oil
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
3/4 teaspoon salt

Preheat oven to 250 degrees F

Combine the first 6 ingredients in a large bowl.  Mix together well.  In a smaller bowl combine the last 5 ingredients.  Stir with a whisk until well combined.  Mix the wet ingredients into the large bowl.  Stir to evenly mix all ingredients.  Pour onto 2 sheet pans.  Cook for about 1 hour 15 minutes.  Stir every 30 minutes.  Cook until nicely toasted.  Allow to cool about 30 minutes.  Pour into storage container and enjoy!
