In food and wine. My palette does enjoy tannins. I love dark chocolate, walnuts, black tea and red wine. I also choose wine that pairs with the food I am eating. For the most part we eat a plant based diet. With all of these vegetables white wine is usually a better option. To change that I need to work on the flavors I use. So for Friday nights I need to start looking at recipes with tomatoes, mushrooms, fennel, black pepper, ancho chile, onions. Let's see if I can do that. I think I can, I think I can, I think I can.
